HEIC (High Efficiency Image Container) is the default photo format on iPhones since iOS 11. It offers better compression than JPEG but isn't supported by all applications and websites.
Windows doesn't natively support HEIC without installing the HEIF extension from the Microsoft Store. Converting to JPG gives you a file that opens everywhere without extra software.
There is a small quality reduction since JPG uses lossy compression, but it's typically imperceptible for photos. The trade-off is universal compatibility.
